Chicken Madfoon is marinated chicken and rice dish.

It is made of basmati rice, chicken, onion, carrot, peas, cardamom, cinnamon, garlic, clove, chicken broth, chili powder, dried limes, fideos, black peppercorns, almonds, raisins, bay leaves, salt and oil.

It is prepared by having marinated chicken cooked in an underground hole where it is placed on the sand and surrounded by charcoal.

It is normally decorated with almonds, raisins and chopped onion.

It is mostly eaten for lunch.
