Wagassi is cow's milk cheese.

It is made of milk, apple cider vinegar and sorghum leaves.

It is prepared by mixing milk and vinegar which is then boiled together before being dipped in boiled sorghum leaves.

It is normally eaten fried or cooked in sauces.

It is mostly eaten as snack food.
