Barbagiuan or Barbajuan is a famous Monacan food.

Barbagiuan is a savory filled pastry.

It is made of flour, Swiss chard leaves, cheese, egg, onion, leek, spinach, oregano, pepper, olive oil and salt.

The pastry is prepared by mixing flour, salt, egg and olive oil to create a firm dough which is then knead until smooth and elastic.

The filling is prepared by frying together onion, leek, Swiss chard leaves, spinach and oregano before mixing them with cheese, egg, pepper and salt.

The pastry is then stuffed with the fillings and fried until brown and crisp.

It is mostly eaten as snack food.
