Papas a la Huancaina is a famous Peruvian dish.

Papas a la Huancaina is an appetizer of boiled yellow potatoes in spicy and creamy sauce.

It is made of yellow potatoes, eggs, Quesco Fresco white cheese, Aji Amarillo yellow pepper, evaporated milk, lettuce leaves, black olives, parsley, salt and oil.

It is normally garnished with hard boiled eggs, lettuce leaves, black olives and parsley.

It is mostly eaten as a side dish for lunch with main meals or as snack food.
