Chicken Mandi is a famous Yemeni chicken and rice dish.
Chicken Mandi is made from chicken meat, basmathi rice and a mixture of spices.
It is cooked in the the oven called taboon which is placed in a hole dug in the ground and covered inside by clay. The dry wood is placed in the taboon and burned to generate heat turning into charcoal. The chicken meat is suspended inside the taboon without touching the charcoal. Then the taboon is closed without letting any of the smoke to go outside.
Raisins and pine nuts are added to the rice to increase taste.
It is normally eaten for lunch and special occasions.
