Toast Skagen is a prawns on toast dish.

It is made from peeled prawns mixed with mayonnaise, dill and lemon topped with fish roe.

It is prepared by bread slices being sauteed golden brown on both sides with butter and then being spread with a mixture of chopped dill, prawns, mayonnaise and mustard. White fish roe is then shaped like eggs and placed on top of the toast.

It is normally garnished with sprig of dill and served with a slice of lemon.

It can be eaten for breakfast, lunch or special occasions.
